Loaded Smashed Potatoes…they’re a thing! We’re a big family, and potatoes are a budget friendly staple in our pantry. As often as possible, I try to turn them into our main course. The bad thing about baked potatoes is that they take SOOOO long to bake, especially when you are making them for a crowd! 

Loaded smashed potatoes are much faster though…and we think they taste even better!

I made these for dinner, for 7 people…so I made a big batch. If you don’t need as much, simple reduce the size of the recipe. You could even do one potato if you really wanted to.

To make loaded smashed potatoes, start by boiling 5 lbs of whole potatoes for about 20 minutes. If some of the potatoes are large, cut them in half.

Once boiled, lay them out on a baking sheet…

…and smash them! I used a plate. You don’t want to smash them too much…just enough to break the skin.

Sprinkle with 1 tbsp chives, salt and pepper to taste. Then, drizzle 1/2 cup melted butter over the top.

Next, cover with 8 oz shredded cheddar cheese and 12 oz of cooked, crumbled bacon.

Bake at 400 degrees for 20-25 minutes, or until cheese is melted and potatoes are cooked through.

Serve with sour cream and additional butter, if desired.

  • 5 lbs potatoes
  • 1 tbsp chives
  • salt and pepper, to taste
  • 1/2 cup butter, melted
  • 8 oz cheddar cheese, shredded
  • 12 oz bacon, cooked and crumbled
  • sour cream, optional
  1. Boil potatoes for approximately 20 minutes in salted water.
  2. Drain and place potatoes on greased baking sheet.
  3. Smash with plate or other flat object (just enough to break the skins).
  4. Sprinkle with chives, salt and pepper.
  5. Drizzle melted butter over potatoes.
  6. Top with shredded cheese and crumbled bacon.
  7. Bake at 400 degrees for approximately 20-25 minutes, or until cheese is melted and potatoes are cooked through.
  8. Serve with sour cream and additional melted butter, if desired.
